Corn Basil & Fusili Soup

Preparation time: 5 minutes

Cooking time: 15 minutes

Serves 4



½ cup chopped onions

2 cloves chopped garlic

¾ cup cream style corn (canned)

10 chopped basil leaves

1/3 cup fusili (pasta)

1 teaspoon olive oil

2 tablespoons tomato puree

Salt and pepper to taste


For the garnish

2 tablespoons grated cheese

Basil leaves (optional)



  1. Combine the onion, garlic and olive oil in a microwave safe bowl and microwave on high for 2 minutes.
  2. Add the cream style corn, basil, tomato puree, fusili and 3 cups of water and microwave on high for 10 minutes until the fusili is cooked.
  3. Add the salt and pepper and mix well.
  4. Serve hot, garnished with the cheese and basil leaves.
